SHARE SOME LOVE!
recipe for some “little loves” Amaretti
Ground almond, caster sugar, and egg whites are all you need to make these delicious little pieces of love (that is literally what amaretti means - little loves). So sweet and gooey with goodness oozing out from the middle and a crunchy crust and what a treat.
Here is the recipe and it makes 80. It couldn’t be more simple and easy.
750 g almond meal
500 g sugar
4 egg whites
mix them all together very well. its easier to use your hands which involves less washing up than using the food processer. It’s up to you.
then roll them into wallnut size balls and decorate.
You can use crushed pistachio nuts if you like, or dust with icing sugar or just leave plain. I think it would be yummy to roll them in cinnamon.
Line them out on the tray, they don’t spread out much, so you can put them fairly close
Then squash a half piece of glace cherry or half an almond onto each one so that it spreads out a bit and is no longer spherical
bake at 180 degrees celsius for 15-16 minutes. check them tho at 14 mins as they can burn quite easily at this critical juncture of time!
